This Month's Seasonal Recipe


 
    Pumpkin Marble Cheesecake

 
1½ C. graham cracker crumbs                                    
½ C.  chopped pecans                                         
1/3 C. melted margarine                                                                
16 oz. softened cream cheese                                  
¾ C. sugar                                                      
1 t. vanilla                                                       
3 eggs                                                                    
1 C. pumpkin                                                   
¾ t. cinnamon                                                             
¼ t. ground nutmeg  
                                                                  

Combine crumbs, pecans, margarine.  Press onto bottom and 1½ inches up the sides of a 9-inch cheesecake pan. Bake at 350 degrees for 10 minutes.  Combine cream cheese, ½ C. sugar, vanilla and mix at medium speed until smooth. Add eggs, one at a time, mix well.  Reserve 1 cup of batter and set aside. Add remaining sugar, pumpkin and spices to reserved batter; mix well. Alternately layer pumpkin mixture and cream cheese batter over crust.  With a knife, gently cut through batter layers several times for marbled effect. Bake at 350 degrees for 55 minutes or until done. Cool before removing from pan. Decorate Halloween style and refrigerate until served.
